Take a 400-cover canteen that pushes 70 kg of shredded cabbage, 40 kg of sliced carrot and 25 kg of diced onion through prep before the first wok is lit. On a knife and a hand mandoline that is most of a morning; on a properly specified slicer it is a little over an hour of loading a hopper.
That difference is what a buyer pays for when shortlisting a commercial vegetable slicer. Not blade count, and not the finish on the housing: the kilograms that leave the prep bench per labour-hour, at a cut geometry the menu can repeat every single day without a disc change in the middle of service.
A commercial vegetable slicer converts whole produce into a fixed cut geometry at roughly 80 to 300 kg per attended hour, depending on feed design and drive power.
The category overlaps with domestic food processors, hand mandolines and industrial dicers, so the boundary is worth stating plainly. A commercial unit is defined by duty cycle and by cleaning access, not by the number of accessories in the box.
A commercial vegetable slicer is a motorised food-preparation machine that reduces whole produce into a controlled slice, strip, dice or segment, at an output of tens to hundreds of kilograms per hour, with every produce-contact part made from a food-grade material that one operator can remove by hand.
Yongkang Ruilong Electric Appliance Co., Ltd. builds this class of equipment in Yongkang, Zhejiang, the hardware cluster known as China's Hardware Capital, where stainless fabrication and motor supply sit within a short radius. On the bench that shows up as tool-free blade release, heavier gauge guards and a drive rated for a full prep shift rather than a five-minute pulse.
Two numbers settle most slicer purchases: the cut geometry the menu repeats every day, and the kilograms per hour the prep window has to clear.
Machines in this class are sold as a base unit plus interchangeable discs and grids. A working set covers a 2-8 mm slicing disc, a 3-7 mm shredding disc, an 8-20 mm dicing grid and a julienne plate. Buyers who order a single disc usually return for the second within a season, and that second order costs more than specifying the full set up front.
| Machine class | Cut output | Attended throughput | Main constraint |
| Single-inlet push slicer | Slice, strip, julienne | 60-100 kg/h | One feed path, one cut at a time |
| Double-inlet multifunction slicer | Two cut setups in parallel | 120-180 kg/h | Bench space and matched loading |
| Conveyor-belt automatic cutter | Continuous slice, adjustable length | 200-400 kg/h | Footprint and uninterrupted feed |
| Granular vegetable machine | Controlled particle size for fillings | Batch rated | Batch cycle, not continuous flow |

Where salad, stir-fry and soup prep share one bench, the double-inlet configuration takes the disc change off the critical path: two feed openings, two cut setups, one operator. The RL6 double-inlet platform is built exactly for that shared-bench pattern, with a stainless body that wipes down at the end of prep.
A single-inlet slicer runs one cut path at a time; a double-inlet machine runs two independent feed paths, so salad prep and stir-fry prep proceed in parallel without a disc change.

Changeover is the cost that rarely appears in a quotation. If a prep cook swaps a disc four times per shift and each swap takes 90 seconds, that is six minutes of lost line time per shift, or roughly 24 hours across a 240-shift year. A single-inlet machine with one dominant cut, or a second machine on the line, removes that arithmetic entirely.
Modelled on cabbage cut at 3 mm in a 400-cover kitchen, attended output rises from about 12 kg per labour-hour by hand to roughly 300 kg per hour on a conveyor-fed cutter.

The model excludes the parts that eat the savings: 15 to 20 minutes of end-of-shift cleaning, disc changes, and the first two weeks while the crew learns to load a hopper evenly instead of feeding it one carrot at a time. Subtract those and the conveyor class still clears three times the volume of a hand bench.
Every produce-contact part should be 304 or equivalent food-grade stainless steel. China's GB 4806.9-2016 governs food-contact metal materials and articles, and EU Regulation (EC) No 1935/2004 is the framework rule for food-contact materials in Europe.
Ask for the material documentation with the quotation, not after delivery. Two structural details decide whether a machine is genuinely cleaned between services rather than rinsed.
The 60-second test: if a prep cook cannot strip the blade assembly by hand in under a minute, the machine will be rinsed instead of cleaned, and residue will carry into the next batch.
Guard geometry: the feed opening and pusher must make hand contact with the blades impossible, with an interlock that stops the drive the moment the guard is lifted.
At 12 kg per labour-hour by hand against 90 kg per hour on a single-inlet slicer, a 135 kg daily prep load falls from 11.3 hours to 1.5 hours.
The inputs matter more than the result. The model above uses a 135 kg daily load, 12 kg per labour-hour for hand slicing, and a 90 kg per hour attended output that already allows for reloading the hopper. It excludes the 15 to 20 minutes of cleaning, so treat 1.5 hours as the floor and 1.8 hours as the realistic figure.
Write five numbers before requesting a quote: daily kilograms, peak-hour kilograms, cut geometry, bench footprint and cleaning window.
Add the full disc and grid set to the original order rather than buying it later, and confirm the spare-parts position for blades and pushers before the machine ships.
A slicer is a throughput decision wrapped in stainless steel. Get the cut geometry and the peak-hour kilograms right, size the drive and the feed path against the busiest hour rather than the daily average, and the machine earns its keep inside a single prep season. Buyers who want to see the whole prep line in one place can review the commercial food processing equipment range, covering slicers, cutters, granular vegetable machines, dough mixers and filling preparation built on the same stainless platform.
Plan for 100 kg per day. At 0.2 kg of sliced vegetables per cover, 500 covers require 100 kg; concentrated into a three-hour prep window that averages 33 kg per hour, and a machine rated at 100 kg per hour gives roughly three times the headroom a peak service needs.
Three are enough for most menus: 3 mm slices for stir-fry and salad, 5 mm for soups and braises, and a 10 mm dicing grid for stews and fillings. Each extra geometry adds one disc or grid, so standardising on three keeps the accessory order short and the changeover count low.
For small batches, yes. The RT220 runs at 550 W, the RT280 at 750 W and the RT320 at 1000 W, so filling production above roughly 300 kg per day belongs in the 1000 W class, or in the 450 model with its 3000 W drive and four blades.
Three checks take under ten minutes: GB 4806.9-2016 documentation for every metal contact part, hand removal of the blade assembly in under 60 seconds, and a guard interlock that stops the drive the moment the feed cover is lifted.
